The seasons set the pace at Whiteley's Kitchen. Executive Chef Eliano Crespi and Head Chef Jose Jara shape a menu around the best British produce they can get their hands on, guided by flavour, curiosity and a healthy respect for ingredients at their peak.

Fermentation Expert Jelena Belgrave brings her own quiet magic to the kitchen, with ferments, preserves and live techniques woven throughout the menu. Familiar flavours take unexpected turns, ingredients are celebrated in their prime, and every dish carries the character of the season.

Wine Director Eugenio Egorov keeps things just as interesting in the glass, curating wines chosen for personality, provenance and the stories they tell.

Dinner: 5:30pm to 10:00pm

Sunday Dinner: 6:00pm to 9:30pm
