The menu draws on familiar foundations and traditional flavours, reworked with instinct rather than rules. Fermentation, preservation, and live techniques are used where they add depth, not drama. Led by Executive Chef Eliano Crespi, the kitchen cooks with confidence and restraint. Ingredients are treated simply. Technique supports flavour. Nothing is added for effect.
Dishes are generous, direct, and designed to be eaten often.
